Homemade Belgian buns are soft, enriched sweet rolls that make a lovely addition to a breakfast table or afternoon tea spread. Their tender dough, fruity center, and delicate icing create a satisfying combination of textures and flavors.
Although they require time to rise, the preparation is manageable with a little planning. Making them at home also allows the filling and sweetness to be adjusted to personal taste.

Ingredients

For the dough
3½ cups (450 g) bread flour
2¼ teaspoons instant yeast
¼ cup (50 g) granulated sugar
½ teaspoon salt
¾ cup (180 ml) lukewarm milk
1 large egg
5 tablespoons (70 g) unsalted butter, softened
1 teaspoon vanilla extract
For the filling
½ cup (150 g) raspberry or strawberry jam
¼ cup (40 g) raisins, optional
For the icing
1 cup (120 g) powdered sugar
2–3 tablespoons milk
½ teaspoon vanilla extract
Glacé cherries or small pieces of dried fruit, optional

Preparation and Cooking Time

Preparation time: 30 minutes
Rising time: 1½–2 hours
Cooking time: 15–20 minutes
Total time: approximately 2½–3 hours
Yield: 8 buns

Instructions

1. Mix the flour, yeast, sugar, and salt in a large bowl.
2. Add the milk, egg, and vanilla, then mix into a dough.
3. Knead until smooth, gradually adding the softened butter.
4. Cover and let the dough rise for 1–1½ hours.
5. Roll the dough into a rectangle on a lightly floured surface.
6. Spread a thin layer of jam over the dough and sprinkle with raisins if desired.
7. Roll the dough into a log and cut it into eight portions.
8. Arrange the pieces on a lined baking tray, cover, and let rise for 30–45 minutes.
9. Preheat the oven to 180°C (350°F).
10. Bake for 15–20 minutes, until the buns are lightly golden and cooked through.
11. Cool the buns before mixing the powdered sugar, milk, and vanilla into a thick icing.
12. Drizzle the icing over the buns and decorate with dried fruit if desired.

Tips for Soft, Even Buns

Avoid adding too much flour during kneading. The dough should feel soft and slightly tacky rather than dry, which helps produce a tender result. If it is difficult to handle, lightly flour the work surface instead of adding large amounts directly to the dough. Spread the jam in a thin, even layer and leave a small border around the edges. Too much filling can make the dough difficult to roll and may cause it to leak during baking.

Finishing and Serving

Let the buns cool before applying the icing. If they are still hot, the sugar mixture can melt and run off the surface. Adjust the icing with small amounts of milk until it is thick enough to drizzle slowly. Serve the buns once the icing has begun to set. They are enjoyable on their own or alongside a warm cup of tea or coffee. For a simple presentation, arrange them on a plate with the fruit filling visible at the center of each spiral.
Belgian buns combine soft homemade dough, fruity sweetness, and a light icing into a comforting baked treat. The most important steps are allowing enough time for rising, using a modest amount of filling, and cooling the buns before decorating. With a little patience, this recipe produces a batch of sweet rolls suitable for sharing at breakfast, during an afternoon break, or whenever homemade baking is welcome.
