Cooking time: 45–55 minutes
Total time: approximately 1 hour 15 minutes
Servings: 4
Instructions
1. Preheat the oven to 190°C (375°F).
2. Cut the aubergine into cubes and cook in olive oil until tender and lightly golden.
3. In the same pan, soften the onion, then add the garlic.
4. Stir in the tomatoes, rice, stock, oregano, salt, and pepper.
5. Add the cooked aubergine and most of the basil.
6. Transfer the mixture to a suitable baking dish and arrange the mozzarella over the top.
7. Cover with foil and bake for about 30 minutes.
8. Remove the foil and bake for another 15–25 minutes, until the rice is tender and the cheese has melted.
9. Check that the rice is fully cooked, adding a little hot water if needed and allowing extra baking time.
10. Rest for 5 minutes, scatter over the remaining basil, and serve.
Getting the Best Texture
The main challenge is cooking the rice evenly without allowing the mixture to dry out. Use a baking dish that holds the ingredients comfortably, and cover it during the first part of baking to retain moisture. The exact cooking time can vary depending on the rice variety and the depth of the dish, so check the rice before serving.
Mozzarella adds a soft, stretchy layer, while a little grated cheese can provide extra flavor if desired. For a more browned top, leave the dish uncovered toward the end of cooking. Allowing the bake to rest briefly after removing it from the oven helps the liquid settle and makes serving easier.
Serving Suggestions
Serve the rice bake on its own for a simple meal or alongside a crisp green salad. A few fresh basil leaves and a drizzle of olive oil make an easy finishing touch. For variation, add chopped bell peppers or sliced mushrooms to the tomato mixture. These vegetables complement the aubergine without changing the basic character of the dish. Keep additional ingredients cut into small pieces so they cook evenly with the rice.
This aubergine and mozzarella rice bake combines tender vegetables, tomato-seasoned rice, and melted cheese in a convenient oven dish. Cooking the aubergine first develops its flavor, while covering the rice during baking helps it become tender. With a little preparation and a straightforward cooking method, this recipe offers a comforting homemade meal that can be adapted with different vegetables and herbs.
