Stuffed tomatoes are a simple way to turn fresh produce into a flavorful homemade meal. Filled with chickpeas, breadcrumbs, garlic, and fragrant herbs, these baked tomatoes offer a tender exterior and a savory filling with a lightly crisp top.
The ingredients are easy to prepare, and the oven does most of the work. Serve them for lunch, dinner, or as a colorful side dish alongside a fresh salad.

Ingredients

6 medium ripe tomatoes
1 cup cooked chickpeas, drained
¾ cup fresh breadcrumbs
2 garlic cloves, finely chopped
3 tablespoons olive oil
¼ cup fresh parsley, chopped
2 tablespoons fresh basil, chopped
1 tablespoon lemon juice
½ teaspoon dried oregano
Salt, to taste
Black pepper, to taste

Preparation and Cooking Time

Preparation time: 20 minutes
Cooking time: 30–35 minutes
Total time: approximately 55 minutes
Servings: 3–6, depending on portion size.

Instructions

1. Preheat the oven to 190°C (375°F).
2. Cut the tops off the tomatoes and scoop out the centers. Chop the reserved flesh.
3. Mix the chickpeas, tomato flesh, garlic, breadcrumbs, herbs, lemon juice, olive oil, salt, and pepper.
4. Arrange the tomatoes in a baking dish and spoon the filling into each one.
5. Drizzle a little olive oil over the filling.
6. Bake for 30–35 minutes, until the tomatoes soften and the topping turns golden.
7. Rest for a few minutes before serving.

Tips for Better Results

The filling should be moist but not soggy. Tomatoes release liquid as they bake, so avoid adding too much extra moisture. Breadcrumbs help absorb the juices and create a more substantial texture. Use tomatoes of similar size to help them cook evenly. If the filling browns too quickly, loosely cover the dish with foil for the remainder of the baking time. Coarse fresh breadcrumbs are especially useful when a crisp topping is preferred, while finer crumbs produce a more compact filling.

Serving Suggestions

Serve the tomatoes warm as a light main dish or pair them with roasted vegetables, cooked grains, or a fresh green salad. Their savory flavor works well with simple accompaniments that allow the herbs and chickpeas to stand out. For variation, add a few chopped olives or finely diced roasted peppers to the filling. A little lemon zest can also brighten the flavor. Keep additions moderate so they complement rather than overwhelm the main ingredients.
Store leftovers in a covered container in the refrigerator and reheat thoroughly before serving. The topping may soften during storage, but reheating in the oven can help restore some crispness.
These stuffed tomatoes combine everyday ingredients into a satisfying baked dish. Chickpeas add substance, breadcrumbs provide texture, and fresh herbs bring a fragrant finish. With straightforward preparation and less than an hour from start to finish, this recipe offers a practical option for a homemade meal that is both inviting and easy to customize.
