This chicken and bread bake brings together crisp pieces of flatbread, tender roasted chicken, tangy yogurt and warmly spiced onions in one generous dish. Sumac gives the chicken and onions a bright, lemon-like character, while tahini adds depth to the creamy yogurt sauce.
A fresh cucumber and avocado salad provides a cool contrast, making the meal feel balanced rather than overly rich. The combination is practical for sharing and offers several different textures in every serving.

Ingredients

4 small flatbreads, cut into pieces
75ml olive oil
1½ tsp ground cumin
1½ tbsp ground sumac
¼ tsp ground cinnamon
¼ tsp ground allspice
800g boneless, skinless chicken thighs
2 tbsp lemon juice
30g pine nuts
1 large red onion
5g fresh parsley
400g Greek-style yogurt
40g tahini
1 garlic clove
2 tsp lemon zest
2 tbsp lemon juice
¾ tsp salt
Black pepper, to taste
For the salad:
3 ripe avocados
3 tbsp lemon juice
300g cucumber
1 small gem lettuce
3–4 spring onions
3 tbsp olive oil
Chilli flakes, optional
Preparation time: 20 minutes
Cooking time: about 1 hour
Serves: 4

Instructions

1. Heat the oven to 190°C, or 170°C for a fan oven. Place the flatbread pieces on a lined baking tray. Toss them with about 1 tablespoon of olive oil and a small pinch of salt, then arrange them in one layer.
2. Bake the bread for around 10 minutes, turning the pieces halfway through cooking. Remove them when crisp and lightly golden. Increase the oven temperature to 220°C, or 200°C for a fan oven.
3. Combine the cumin, sumac, cinnamon and allspice in a small bowl. Place the chicken in a larger bowl and add 2 tablespoons of olive oil, half the spice mixture, lemon juice, salt and black pepper. Mix until the chicken is evenly coated.
4. Arrange the chicken on a lined baking tray and roast for about 15 minutes, or until fully cooked. Set it aside briefly, keeping any cooking juices from the tray.
5. When the chicken is cool enough to handle, shred it into long pieces. Return the pieces to the tray so they can absorb some of the juices.
6. Heat the remaining olive oil in a large frying pan over medium heat. Add the pine nuts and cook for 2–3 minutes, stirring frequently, until lightly golden. Transfer them to a plate while leaving the flavored oil in the pan.
7. Thinly slice the onion and add it to the warm oil with a little salt. Cook for about 15 minutes, stirring occasionally, until soft and pale golden. Stir in the remaining spice mixture and black pepper.
8. Make the yogurt sauce by combining the yogurt, tahini, crushed garlic, lemon zest, lemon juice and salt in a bowl. Stir until smooth.
9. To assemble the main dish, spread the crisp flatbread across a large serving platter or deep bowl. Spoon over half of the yogurt sauce, then add half the shredded chicken and half the spiced onion. Repeat with the remaining yogurt, chicken and onion.
10. Pour the reserved chicken juices around the bread. Scatter the toasted pine nuts and chopped parsley over the top, then finish with a little sumac and olive oil.
11. For the salad, cut the avocado into small cubes and toss gently with the lemon juice. Cut the cucumber into bite-sized pieces and add it with the chopped lettuce and sliced spring onions.
12. Add the olive oil and a little salt to the salad. Fold everything together gently so some avocado becomes creamy while larger pieces remain intact. Add chilli flakes if desired and serve alongside the chicken bake.

Keeping the Textures Right

Timing is important because the dish depends on contrast. The bread should be crisp before assembly, while the yogurt needs to remain cool and creamy. Adding the sauce too early can soften the bread more than intended. The onions should also be cooked patiently. Medium heat gives them enough time to soften without burning.

A Balanced Way to Serve It

This meal is best assembled shortly before serving. The warm chicken and onions sit against the cool yogurt and crisp bread, while the cucumber and avocado salad supplies freshness and crunch. Lemon appears in both the main dish and salad, creating a consistent bright note across the plate. The components can also be prepared separately ahead of time.
This recipe turns straightforward ingredients into a layered meal with plenty of texture and flavor. The most important technique is simply to protect those contrasts: crisp bread, tender chicken, soft onions, creamy yogurt and fresh vegetables. When assembled at the right moment, each part remains distinctive while still working naturally with the others.
