When ripe tomatoes are cooked gently with butter and crème fraîche, they become the heart of a simple but satisfying meal. Spoon the creamy tomato mixture over crisp sourdough and finish with fresh herbs for a dish that feels comforting without requiring complicated preparation.
The combination is especially useful when a quick lunch or light dinner is needed, with just a few ingredients creating plenty of flavour.
Ingredients
1 tbsp unsalted butter
4 ripe plum tomatoes
200g crème fraîche
2 thick slices sourdough bread
A few fresh basil leaves
Salt, to taste
Black pepper, to taste
Preparation and Cooking Time
Preparation: 5 minutes
Cooking: 15 minutes
Serves: 2
Instructions
1. Melt the butter in a frying pan over medium heat.
2. Cut the tomatoes in half, season with salt and pepper, and place them cut-side down in the pan. Cook for about 5 minutes until softened.
3. Add the crème fraîche and gently simmer for about 2 minutes.
4. Turn the tomatoes over and cook for another 1–2 minutes, allowing the creamy sauce to combine with the tomato juices.
5. Toast the sourdough until crisp around the edges.
6. Place the tomatoes on the toast, spoon over the creamy sauce, and finish with torn basil leaves.
Choosing Good Tomatoes
Tomatoes are the main ingredient, so choosing ripe ones makes a noticeable difference. Look for tomatoes that feel firm but have a little give when gently pressed. They should also have a fresh, fragrant aroma. Plum tomatoes work particularly well because their shape makes them easy to halve and cook.
Their relatively firm texture also helps them hold together after being softened in the pan. Avoid cooking them for too long. The goal is to make them tender while retaining enough structure to sit comfortably on the toast.
Making the Creamy Sauce
The sauce comes together directly in the same pan as the tomatoes. Once the crème fraîche is added, keep the heat moderate and allow it to warm gently. This helps it combine with the buttery tomato juices while maintaining a smooth texture. There is no need to add a large number of seasonings.
Salt and black pepper are enough to enhance the tomatoes, while the fresh herbs provide additional flavour at the end. If the sauce becomes too thick, a small amount of water can loosen it. If it remains very thin, allow it to simmer briefly before serving.
Preparing the Toast
A sturdy slice of sourdough works well because it can support the tomatoes and creamy topping without becoming immediately soggy. Toast the bread until the surface is crisp but the centre still has some softness. For the best texture, assemble the dish shortly before eating. Spoon the warm tomatoes and sauce onto the toast just before serving so the bread retains as much of its crispness as possible.
Simple Variations
The basic recipe can be adjusted without making it complicated. Fresh basil is an obvious choice, but other soft herbs can provide a slightly different character. A small amount of finely chopped chives or parsley can also work well. For a stronger tomato flavour, allow the tomatoes to cook slightly longer before adding the crème fraîche. For a lighter result, use a thinner layer of sauce over the toast.
The important part is maintaining the balance between the juicy tomatoes, creamy topping, crisp bread, and fresh herbs.
Creamy tomatoes on toast are a good example of how a small ingredient list can still produce a satisfying meal. Gentle cooking brings out the tomatoes' flavour, while crème fraîche adds a smooth richness that works naturally with crisp sourdough. Fresh herbs provide the final touch. With minimal preparation and a short cooking time, this recipe is practical enough for an everyday meal while still offering a combination of textures and flavours that makes it feel special.
