Apfelschmarrn is a comforting apple pancake with a texture that sits somewhere between a fluffy pancake and a soft baked pudding. Instead of being served as one neat round, the pancake is deliberately torn into pieces, returned to the pan, and lightly caramelized before serving.
The result is especially appealing when the edges become golden and crisp while the middle stays tender. It can work as a sweet breakfast, a relaxed afternoon dish, or a simple dessert.
Ingredients
40g butter
90g plain flour
½ tsp salt
3 eggs
75ml milk
75ml cream
Finely grated zest of ½ lemon
1 tbsp caster sugar
1 dessert apple
25g raisins or sultanas
1 tbsp icing sugar
½ tsp ground cinnamon
25g flaked almonds, optional
Preparation time: 10 minutes
Cooking time: 15 minutes
Serves: 2–4
Instructions
1. Heat the oven to 220°C, or 200°C with a fan. Melt the butter in a medium ovenproof frying pan over medium-high heat. Continue heating briefly until it develops a pale golden color, then remove the pan from the heat.
2. Place the flour and salt in a large mixing bowl. Separate the eggs, putting the whites in a clean bowl and the yolks in another bowl.
3. Whisk the milk and cream into the egg yolks. Gradually add this mixture to the flour, whisking until the batter becomes smooth. Stir in the lemon zest.
4. Beat the egg whites until they become foamy. Add the caster sugar and continue whisking until soft peaks form. The foam should hold its shape but remain creamy rather than becoming very firm.
5. Stir a small portion of the beaten whites into the batter to loosen it. Gently fold in the remaining whites, taking care not to flatten too much of the air.
6. Cut the apple into thin wedges and remove the core. Set aside a little of the melted butter, then return the pan to medium heat.
7. Once the butter begins to sizzle, pour the batter into the pan. Arrange the apple wedges over the surface and scatter over the raisins or sultanas if using. Cook until the underside becomes a deep golden brown.
8. Carefully turn the pancake. It may break during this stage, and that is perfectly fine because the finished dish will be divided into pieces. Transfer the pan to the hot oven and bake for about five minutes, until the center is cooked and the pancake has risen.
9. Mix the icing sugar with the cinnamon. Remove the pancake from the oven and use two forks to tear it into bite-sized pieces.
10. Return the pan to medium-high heat and add the reserved butter. Add the almonds if using and toast them briefly. Put the pancake pieces back into the pan, sprinkle with most of the cinnamon sugar, and toss gently until the pieces are lightly coated and caramelized.
11. Divide the warm apfelschmarrn between plates and finish with the remaining cinnamon sugar. Serve immediately while the edges are crisp and the center is still soft.
Tips for Better Texture
The egg whites should not be beaten until extremely stiff. A soft foam is easier to fold into the batter evenly and helps maintain some of the air during cooking. Fold gently rather than stirring aggressively. The apple should also be firm enough to withstand the heat. Very soft cooking varieties can break down quickly and release additional moisture, which may make the pancake less distinct. Keeping the peel on is optional, but it can help the apple wedges hold their shape.
Serving Ideas
A dusting of cinnamon sugar gives the dish a warm, familiar finish, while toasted almonds add crunch. For a fruitier plate, serve it with a spoonful of apple or plum compote. A little chilled cream or ice cream can also provide a pleasant contrast to the hot pancake. The sweetness can be adjusted according to taste. Because the apples and finishing sugar contribute much of the sweetness, the batter itself does not need to be heavily sweetened.
Apfelschmarrn is appealing because it does not demand perfect presentation. The combination of airy batter, tender apple, browned butter, and caramelized pieces creates plenty of character from a relatively simple list of ingredients. With careful folding and moderate heat, this apple pancake becomes a warm, satisfying dish that is easy to adapt and enjoyable straight from the pan.
