Vietnamese chicken snowballs are small, savory meatballs with a distinctive finish: a coating of shredded coconut that adds gentle sweetness and a pleasant texture.
The chicken mixture combines fresh herbs, ginger, garlic, and seasonings, creating flavorful bites that work well as party food, a shared starter, or a fun addition to a family meal.

Ingredients for Chicken Snowballs

For the meatballs:
1 kg minced chicken
1 large egg
½ onion, finely chopped
80 g shallots, finely chopped
60 g fresh coriander, finely chopped
30 g shredded coconut
70 g fresh ginger, finely chopped
1 tablespoon minced garlic
1 tablespoon cornstarch
4 tablespoons fish sauce
1 tablespoon cracked black pepper
3 tablespoons extra-virgin olive oil
1 tablespoon brown sugar
1 teaspoon chicken seasoning powder
For the coating and serving:
300 g Japanese mayonnaise
50 g chili sauce, optional
200 g shredded coconut
Butter lettuce leaves
1 carrot, optional, for decoration

Preparation Time and Servings

Preparation: 30 minutes
Marinating: 30 minutes
Cooking: 20 minutes in an air fryer or approximately 30 minutes under an oven grill
Yield: Around 25–30 meatballs

Prepare the Chicken Mixture

Place the minced chicken in a large mixing bowl. Add the egg, chopped onion, shallots, coriander, shredded coconut, ginger, garlic, and cornstarch. Sprinkle in the black pepper, then add the fish sauce, olive oil, brown sugar, and chicken seasoning powder. Mix everything thoroughly until the ingredients are distributed throughout the chicken. A spoon or clean hands can be used for this step. The mixture should hold together when shaped, with the herbs and aromatics spread evenly through each portion.
Cover the bowl and refrigerate the mixture for 30 minutes. This resting period gives the seasonings time to blend and makes the mixture easier to handle when forming the meatballs.

Shape and Cook the Snowballs

Prepare a clean work surface and divide the mixture into small, evenly sized portions. Roll each portion between your palms to form a smooth ball. Keeping the sizes similar helps the meatballs cook at approximately the same rate. For an air fryer, preheat the appliance to 180°C. Arrange the meatballs in a single layer, leaving a little room between them so hot air can circulate. Cook for around 18–20 minutes, checking that the centers are fully cooked.
For an oven method, preheat the grill to approximately 200°C and cook the meatballs for about 30 minutes, adjusting the time to suit their size and the appliance. Turn them as needed for even cooking, and check the thickest meatball before removing the batch.

Make the Coconut Coating

Combine the Japanese mayonnaise and optional chili sauce in a bowl, stirring until the mixture is smooth. Place the shredded coconut in a separate shallow dish so it is ready for coating. Allow the cooked meatballs to rest briefly, then roll each one in the mayonnaise mixture. Transfer it to the coconut and turn gently until the outside is covered. Work in small batches to keep the coating neat and prevent too much sauce from collecting on each piece.

Arrange and Serve

Line a serving plate with butter lettuce leaves and arrange the finished snowballs on top. For an extra decorative touch, add carrot cut into flower shapes. The garnish is optional, so the dish can remain simple when time is limited. Serve the meatballs while warm for a contrast between the tender chicken center and the delicate coconut coating. They can also be presented on a platter for guests to take individually. Keep any leftovers covered and refrigerated, and reheat them thoroughly before serving again.

Tips for Better Results

Chop the herbs and aromatics finely so the mixture shapes easily and cooks evenly. Avoid making the balls too large, since smaller portions are easier to coat and more likely to cook through consistently. Leave space between them during cooking rather than crowding the basket or tray. For a milder finish, leave out the chili sauce. The mayonnaise still provides a creamy layer that helps the shredded coconut adhere to the surface.
Vietnamese chicken snowballs bring together fragrant seasonings, tender chicken, and a distinctive coconut finish in a convenient bite-sized format. The steps are straightforward, and the recipe can suit both casual meals and special gatherings. With evenly shaped meatballs, thorough cooking, and a light, consistent coating, this dish offers a memorable combination of savory flavor and gentle sweetness.
