Preparing nutritious school lunches can become repetitive, especially when sandwiches are the usual choice. Fortunately, a little variety can make packed meals more appealing without adding complicated cooking tasks.
These three family-friendly recipes combine vegetables, wholegrains and satisfying flavours. They can also be prepared in advance, making busy school mornings easier.
Colourful Pasta And Bean Salad
Roasted cherry tomatoes, sweetcorn and creamy cannellini beans create a vibrant alternative to sandwiches.
Servings: 4–6
Preparation: 20 minutes
Cooking: 70 minutes
Ingredients:
650g cherry tomatoes, halved
4 garlic cloves, unpeeled
400g tinned cannellini beans, drained
2 corn cobs
300g short pasta
1 shallot, finely chopped
100g feta cheese
110ml olive oil
2½ tablespoons mild vinegar
Fresh basil and sea salt
Method:
Preheat the oven to 160°C fan. Toss the tomatoes and garlic with approximately 80ml olive oil and salt. Roast for 30 minutes.
Add the beans and continue roasting for another 15–20 minutes.
Meanwhile, boil the corn for five minutes, then cook the pasta until tender. Remove the kernels from the cobs.
Combine the shallot, vinegar and remaining olive oil to make a dressing.
Mix the pasta with the roasted vegetables, corn and dressing. Finish with crumbled feta and basil.
Refrigerate promptly and pack with an ice pack to keep the salad chilled.

Tips For Better School Lunches
Preparing ingredients the previous evening can save valuable time. Store cooked foods in sealed containers and keep perishable lunches chilled until eaten.
For additional variety, pair these recipes with fresh fruit or vegetable sticks.
Always check school requirements concerning allergens, particularly wheat, eggs, milk and mustard.
With a little planning, school lunches can be colourful, satisfying and enjoyable without relying on the same familiar meal every day.
