A satisfying roast dinner can be simple to prepare while still offering plenty of flavor. This miso and chilli chicken recipe pairs seasoned chicken with tender squash and sweet, oven-roasted leeks.
The miso mixture adds a deep, savory taste, while chilli brings gentle heat and the vegetables absorb the delicious juices as they cook. Everything comes together in one roasting tray, making this a practical choice for a family meal or a relaxed evening at home.

Why This Combination Works

Miso is a fermented soybean paste known for its rich, savory flavor. Mixed with chilli and a little oil, it creates a coating that seasons the chicken and helps the surface develop color in the oven. The result is a balance of salty, spicy, and slightly sweet notes without needing a long list of seasonings.
Squash adds natural sweetness and becomes soft and tender when roasted. Leeks contribute a mild onion-like flavor that grows sweeter as they cook. Together, the vegetables provide a contrast to the seasoned chicken and make the tray feel complete.
Roasting everything together also saves time on washing up. Cutting the vegetables into evenly sized pieces helps them cook at a similar pace, while arranging the ingredients in a single layer encourages better browning.

Ingredients

For approximately 4 servings:
4 chicken thighs
700 g squash, peeled, seeded, and cut into chunks
2 medium leeks, trimmed and sliced lengthwise
2 tbsp white miso paste
1–2 tsp chilli paste, according to taste
1 tbsp olive oil
1 tbsp maple syrup
2 garlic cloves, finely grated
1 tbsp lemon juice
¼ tsp ground black pepper

Preparation and Cooking Time

Allow about 15–20 minutes for preparation and 40–50 minutes for roasting. The exact cooking time depends on the size of the chicken pieces and the oven. Plan for roughly one hour from start to finish.

Instructions

1. Preheat the oven. Heat the oven to 200°C (400°F). Choose a roasting tray large enough to hold the chicken and vegetables without crowding them.
2. Make the seasoning mixture. In a small bowl, combine the miso paste, chilli paste, olive oil, maple syrup, grated garlic, lemon juice, and black pepper. Stir until the mixture is smooth and evenly blended.
3. Prepare the chicken. Pat the chicken dry with paper towels. Coat each piece with the miso mixture, spreading it over the surface. Keep a little mixture aside for the vegetables, using a clean spoon to avoid cross-contamination.
4. Prepare the vegetables. Cut the squash into similar-sized chunks. Trim and wash the leeks carefully, then slice them lengthwise or into thick pieces. Dry them before roasting so excess water does not interfere with browning.
5. Arrange the tray. Place the squash and leeks in the roasting tray. Toss them with the reserved seasoning mixture, then spread them out. Arrange the chicken pieces among the vegetables, leaving some space between each piece.
6. Roast until cooked. Place the tray in the oven for approximately 40–50 minutes. Turn the vegetables once during cooking and check their tenderness. The chicken should be thoroughly cooked, reaching an internal temperature of 74°C (165°F).
7. Rest and serve. Remove the tray from the oven and let the chicken rest for five minutes. Spoon the roasted vegetables and pan juices onto plates, then serve with the chicken.

Tips for the Best Results

Miso paste varies in saltiness, so avoid adding extra salt before tasting the finished dish. The paste already provides a strong savory base, and the chilli mixture adds additional flavor. Start with a small amount of chilli paste for a milder result, then adjust the quantity on future attempts.
Cutting the squash evenly is important. Large chunks may need more time to soften, while very small pieces can become mushy before the chicken finishes cooking. Aim for pieces of roughly similar size and check them during roasting.
If the tray looks crowded, use two trays rather than piling the ingredients on top of one another. Good spacing allows hot air to circulate and helps the vegetables roast instead of steam. Should the chicken brown too quickly, loosely cover the tray with foil for the remaining cooking time.

Making the Most of Leftovers

This meal can provide a useful starting point for another day's lunch. Once the leftovers have cooled, store the chicken and vegetables in covered containers in the refrigerator and use within three to four days. Refrigerate promptly rather than leaving the food at room temperature for an extended period.
Miso-chilli chicken with roasted squash and leeks is a practical tray-bake that brings together bold seasoning, tender vegetables, and satisfying roasted flavor. Preparing the ingredients in one tray keeps the method manageable, while the leftovers make planning another meal easier. With balanced seasoning, evenly cut vegetables, and careful attention to cooking temperature, this dish offers a straightforward way to bring variety to a home-cooked dinner.
