Pumpkin muffins are a lovely choice when you want a tender baked treat with a gentle sweetness and warm spice. Adding a creamy cheesecake filling makes them feel a little more special without turning the recipe into a complicated baking project.
Each muffin combines a soft pumpkin batter with a smooth cream cheese center, creating a pleasing contrast in both texture and flavor. They work well for breakfast, an afternoon snack, or a homemade dessert to share with family and friends.

What Makes These Muffins Special?

The appeal comes from the combination of two familiar baked treats. Pumpkin gives the muffin batter moisture and a mellow, earthy sweetness, while cinnamon and other warm spices add depth. The cream cheese filling brings a tangy, silky element that balances the sweetness of the surrounding cake.
The filling also gives each muffin a different texture from top to center. The outside bakes into a tender crumb, while the middle remains creamy. For the best result, use a thick pumpkin purée rather than a watery mixture. Too much moisture can make the batter heavy and affect how evenly the muffins bake.

Ingredients

Makes 12 muffins.
For the pumpkin batter
1¾ cups (220 g) all-purpose flour
1 cup (200 g) granulated sugar
1 cup (240 g) pumpkin purée
½ cup (120 ml) neutral vegetable oil
2 large eggs
1 tsp baking powder
½ tsp baking soda
1½ tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground nutmeg
½ tsp salt
1 tsp vanilla extract
For the cheesecake filling
8 oz (225 g) cream cheese, softened
¼ cup (50 g) granulated sugar
1 large egg yolk
½ tsp vanilla extract

Preparation and Baking Time

Allow around 20 minutes to prepare the ingredients and mix the batter, followed by 20–25 minutes of baking. Cooling takes another 20 minutes or longer. Plan for approximately 60–70 minutes from start to finish, including cooling time.

Instructions

1. Prepare the oven and pan. Preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or lightly grease each cup.
2. Mix the filling. In a medium bowl, beat the softened cream cheese with the sugar until smooth. Add the egg yolk and vanilla extract, then mix until the filling is creamy and free of large lumps. Set aside.
3. Combine the dry ingredients. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Mixing them first helps distribute the raising agents and spices evenly.
4. Prepare the wet mixture. In another bowl, whisk the pumpkin purée, sugar, oil, eggs, and vanilla extract until combined. The mixture should look smooth and evenly colored.
5. Make the batter. Add the dry ingredients to the pumpkin mixture. Stir gently until no large patches of dry flour remain. Avoid excessive mixing, which can make the muffins dense rather than tender.
6. Fill the muffin cups. Spoon pumpkin batter into each liner, filling it about one-third of the way. Add a spoonful of cheesecake filling to the center of each portion, then cover with more pumpkin batter until each cup is about three-quarters full.
7. Bake the muffins. Place the pan in the oven and bake for 20–25 minutes. The tops should look set, and a toothpick inserted into the pumpkin portion should come out without wet batter. Avoid testing directly in the creamy center.
8. Cool before serving. Leave the muffins in the pan for about five minutes, then transfer them to a wire rack. Allow them to cool further so the filling can settle and the muffins become easier to handle.

Tips for a Better Texture

Bring the cream cheese to room temperature before mixing. Softened cream cheese blends more easily and helps prevent lumps in the filling. For a smooth center, beat the filling only until the ingredients are combined. Measure the flour carefully. Scooping directly from a packed container can add too much, making the muffins dry. Spoon flour into the measuring cup and level it off, or use a kitchen scale for greater accuracy.

Serving and Storage

These muffins taste pleasant at room temperature, when the pumpkin cake is soft and the center has a creamy consistency. Serve them on their own or alongside a warm drink for a simple snack. A light dusting of cinnamon just before serving can add a little extra aroma. Because the filling contains cream cheese and egg, store cooled muffins in a covered container in the refrigerator.
Pumpkin cheesecake muffins combine the comfort of spiced pumpkin cake with a creamy center in a convenient, individual portion. With careful measuring, moderate baking, and enough cooling time, the muffins can become a dependable homemade treat for sharing or keeping on hand for a sweet snack.
