Italian butter cookies are a lovely addition to a homemade dessert tray, offering a rich buttery flavor and a delicate texture in every bite. Their simple ingredients create a cookie that feels special without requiring complicated techniques.
With a lightly crisp exterior and a tender center, they are delicious on their own or finished with melted chocolate and colorful sprinkles. The dough can also be piped into swirls, rosettes, or other decorative shapes, making these cookies as attractive as they are enjoyable.
Preparation and Baking Time
Preparation time: 20 minutes
Baking time: 10–14 minutes per batch
Total time: Approximately 35–50 minutes, depending on the number of batches and decorating time
Servings: About 24–30 cookies, depending on their size
Ingredients
1 cup unsalted butter, softened
¾ cup powdered sugar
1 large egg, at room temperature
2 teaspoons vanilla extract
2 cups all-purpose flour
¼ cup cornstarch
½ teaspoon baking powder
¼ teaspoon salt
½ cup semisweet chocolate chips, optional for decorating
2 tablespoons colorful sprinkles, optional for decorating
Instructions
1. Prepare the oven and trays. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
2. Cream the butter and sugar. Place the softened butter and powdered sugar in a mixing bowl. Beat until the mixture looks pale, smooth, and fluffy.
3. Add the egg and vanilla. Mix in the egg and vanilla extract until evenly combined. Scrape the sides of the bowl to incorporate any mixture clinging to them.
4. Combine the dry ingredients. In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.
5. Form the dough. Add the dry mixture to the butter mixture in portions. Mix on low speed or stir by hand until a soft dough forms. Avoid overmixing.
6. Shape the cookies. Transfer the dough to a piping bag fitted with a large star tip. Pipe small circles or rosettes onto the prepared trays, leaving space between each cookie. For easier handling, let the dough soften slightly at room temperature if it feels too firm to pipe.
7. Bake until lightly golden. Bake for 10–14 minutes, checking early. The cookies should look set, with lightly colored edges and pale centers.
8. Cool completely. Leave the cookies on the baking sheet for several minutes, then move them carefully to a cooling rack.
9. Decorate if desired. Melt the chocolate chips gently, stirring until smooth. Dip one edge of each cooled cookie into the chocolate and add sprinkles before the coating sets. Let the chocolate firm up before serving.
Tips for Better Cookies
The butter should be soft enough to press easily but should not look melted or oily. Butter that is too cold can make the dough difficult to pipe, while melted butter may cause the cookies to spread more than expected. Measure the flour carefully. Adding too much can make the dough stiff and difficult to shape. When piping, use steady pressure and keep the cookies similar in size so they bake evenly. Should the dough become difficult to squeeze through the piping tip, allow it to rest briefly at room temperature.
Flavor and Decorating Ideas
Vanilla gives the cookies a classic taste, but a little finely grated lemon zest can add a fresh citrus note. Almond extract can also be used in a small amount for a different aroma, provided it suits your preference. For a simpler finish, leave the cookies plain and enjoy their buttery flavor. For a more decorative presentation, dip the ends in chocolate, add sprinkles, or drizzle a little melted chocolate across the tops. Allow any coating to set before stacking the cookies.
Storage and Serving Suggestions
Serve Italian butter cookies with tea, coffee, or another favorite drink. Their small size makes them easy to arrange on a dessert platter alongside other simple baked treats. Once fully cooled, store the cookies in an airtight container at room temperature for up to five days. Place parchment paper between layers to protect decorative toppings. Undecorated cookies are also suitable for freezing in a sealed container; thaw them at room temperature before serving.
Italian butter cookies show how a few familiar baking ingredients can create an elegant homemade treat. Their delicate texture, rich buttery flavor, and decorative possibilities make them suitable for both casual snacking and special occasions. With careful mixing, consistent shaping, and a close eye on the oven, you can prepare a batch of cookies that looks appealing and tastes delicious without an overly complicated process.
