Ingredients

2 tablespoons extra-virgin olive oil — divided
8 ounces shishito peppers — trimmed
2 medium cucumbers — sliced
1 serrano pepper — finely chopped
2 tablespoons fresh lemon juice
1 teaspoon honey
1/2 teaspoon salt — plus more to taste
4 ounces feta cheese — broken into chunks
1/3 cup fresh mint leaves
1/4 teaspoon freshly ground black pepper
Preparation and Cooking Time
Preparation takes about 15 minutes, with roughly 5 to 8 minutes of cooking time for the peppers. Allow a few additional minutes for the charred peppers to cool before assembling the salad.
Instructions
1. Rinse the shishito peppers and dry them thoroughly. Trim away the stems, then set the peppers aside.
2. Heat a large skillet over medium-high heat. Add about 1 tablespoon of olive oil and place the shishitos in the pan. Cook, turning occasionally, until the peppers develop browned or blistered spots and become tender. This should take several minutes.
