A grilled chicken multigrain sandwich is an easy choice when a quick meal needs to feel more satisfying than an ordinary snack. Tender seasoned chicken, crisp vegetables, creamy spread, and hearty multigrain bread come together for a sandwich with plenty of texture.
The best part is that the recipe is simple enough for a weekday lunch while still offering room to adjust the flavors and fillings.

Ingredients

2 slices multigrain bread
150 g boneless, skinless chicken
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp paprika
1/4 tsp black pepper
1/4 tsp salt
2 tbsp mayonnaise
1 tsp mustard
2 lettuce leaves
4 slices tomato
4 slices cucumber
2 tbsp sliced red onion
1 tsp butter

Preparation and Cooking Time

Preparation: 10 minutes
Marinating: 10 minutes
Cooking: 10–12 minutes
Total: About 30 minutes

Prepare the Chicken

Start by placing the chicken on a clean cutting board. If it is particularly thick, gently flatten it so the meat has a more even thickness. This helps it cook more consistently and makes it easier to fit between the slices of bread.
Place the chicken in a bowl and add olive oil, garlic powder, paprika, black pepper, and salt. Turn the chicken until the seasoning coats both sides.
Let it rest for about 10 minutes while preparing the vegetables and sandwich spread. For a simple spread, mix mayonnaise and mustard in a small bowl. Keep it refrigerated if it will not be used immediately.

Prepare the Sandwich Fillings

Wash and dry the lettuce, tomato, and cucumber before slicing. Cut the tomato and cucumber into thin pieces so they are easy to layer without making the sandwich difficult to eat. Thinly sliced red onion adds a sharper flavor and a little crunch. If a milder taste is preferred, use less onion or leave it out.
The multigrain bread provides a hearty base for the sandwich. Lightly buttering the outside before grilling gives the bread a crisp surface while keeping the inside soft.

Instructions

1. Heat a grill pan or heavy skillet over medium heat and lightly grease the surface if needed.
2. Place the seasoned chicken on the hot pan and cook for about 5–6 minutes on the first side. Turn it over and continue cooking until the chicken is fully cooked through. Cooking time can vary depending on thickness, so check the thickest part before removing it from the pan.
3. Transfer the cooked chicken to a clean plate and let it rest for a few minutes. Slice it into thin pieces against the grain for easier eating.
4. Spread the mayonnaise and mustard mixture over one side of each slice of multigrain bread.
5. Add lettuce to one slice of bread, followed by the tomato and cucumber slices.
6. Arrange the grilled chicken evenly over the vegetables. Add the sliced red onion and adjust the amount according to taste.
7. Place the second slice of bread on top, with the spread facing inward.
8. For a crispier sandwich, place the assembled sandwich on the grill pan and cook briefly on both sides until the bread becomes golden and lightly crisp. Press gently with a spatula, but avoid flattening the sandwich too much.
9. Transfer the sandwich to a cutting board and let it sit for a minute before slicing in half.

Easy Ways to Adjust It

This sandwich is easy to customize without changing the basic method. Sliced avocado can add a creamy texture, while grated carrot provides extra crunch. A few slices of bell pepper can also bring a fresh, slightly sweet flavor. For a lighter spread, replace part of the mayonnaise with plain yogurt. If mustard is not preferred, a small amount of another creamy sandwich spread can be used instead.
One common mistake is adding too many wet ingredients. Tomatoes, cucumber, and sauces can soften the bread quickly, so use moderate amounts and pat freshly washed vegetables dry before assembling.
A grilled chicken multigrain sandwich works because each component brings something useful to the finished meal.
The seasoned chicken provides the main savory flavor, while fresh vegetables add crunch and the multigrain bread gives the sandwich a sturdy texture. Grilling the assembled sandwich adds another layer of crispness and warmth.
With a few simple adjustments to the vegetables and spread, the same basic recipe can easily become a regular homemade lunch.
