Chicken Frito pie brings together crunchy corn chips, tender chicken, a savory tomato-based sauce, and a generous layer of melted cheese. Baked in one dish, it offers a satisfying mix of textures without requiring complicated preparation.
The chips provide a crisp base, the seasoned chicken adds substance, and the cheese ties everything together. This homemade version is suitable for a relaxed family dinner or a casual meal shared with friends, with toppings that can be adjusted to suit different tastes.

Ingredients

3 cups cooked chicken, shredded
4 cups corn chips
1 can (400 g) black beans, drained and rinsed
1 can (400 g) chopped tomatoes
1 small onion, finely diced
2 garlic cloves, minced
1 cup sweet corn kernels
1½ cups grated cheddar cheese
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon paprika
½ teaspoon chili powder
½ cup chicken stock
Salt and black pepper, to taste
2 spring onions, sliced
½ cup sour cream, optional

Preparation and Cooking Time

Preparation time: 15 minutes
Cooking time: 25–30 minutes
Total time: approximately 45 minutes
Servings: 4–6

Instructions

1. Preheat the oven to 190°C (375°F).
2. Heat olive oil in a frying pan and soften the onion.
3. Add garlic, cumin, paprika, and chili powder, stirring briefly.
4. Mix in the chicken, tomatoes, black beans, corn, and stock.
5. Simmer for 8–10 minutes and season to taste.
6. Spread half the corn chips in a baking dish.
7. Spoon the chicken mixture over the chips and sprinkle with half the cheese.
8. Add the remaining chips and finish with the rest of the cheese.
9. Bake for 15–20 minutes, until the cheese melts and the filling is bubbling.
10. Garnish with sliced spring onions and serve with sour cream if desired.

Building the Layers

Layering the ingredients helps distribute the chicken filling and cheese throughout the dish. Begin with a portion of corn chips, then add the sauce and chicken mixture. A layer of cheese helps bind the filling to the chips as it melts. Finish with more chips and cheese for a combination of crunchy edges and a soft, savory center.
For a crispier result, keep some of the corn chips aside and scatter them over the dish just before serving. Chips baked beneath the sauce will soften as they absorb moisture, while freshly added ones retain more crunch. Choose a baking dish that allows the ingredients to spread in an even layer. If the filling is piled too deeply, the center may take longer to heat through.

Easy Ways to Customize It

The seasoning can be adjusted depending on how much heat is preferred. Reduce the chili powder for a milder flavor or add a little extra for more warmth. Smoked paprika can replace regular paprika for a deeper, smoky note. For extra vegetables, add diced bell peppers with the onion or stir in chopped zucchini with the tomato mixture. Monterey Jack can replace some of the cheddar for a milder, creamy topping.
Fresh tomatoes, diced avocado, or a spoonful of salsa can also be served alongside the finished bake. Add fresh toppings after baking so they maintain their texture.

Serving and Storage

Serve the pie hot, straight from the oven, while the cheese is melted. A simple green salad or sliced cucumber makes a refreshing accompaniment to the rich filling. Refrigerate leftovers promptly in a covered container and reheat until thoroughly hot. Keep any reserved corn chips separate until serving to preserve their crunch. The filling can also be prepared ahead and assembled with the chips and cheese shortly before baking.
Chicken Frito pie combines familiar ingredients in a convenient baked meal with savory chicken, seasoned tomato sauce, crunchy corn chips, and melted cheese. Preparing the filling first makes assembly straightforward, while adding some chips at the end provides extra texture. With flexible seasoning and simple topping options, this dish can be adapted easily for a casual dinner or a shared weekend meal.
