A poke bowl becomes something special when crisp tempura chicken joins the mix. This version combines golden, crunchy chicken with sushi rice, sweet mango, carrots, broccoli, and pickled onions for a meal with plenty of contrasting textures.
A simple soy-based sauce brings everything together without making the bowl complicated. With about 10 minutes of preparation and 15 minutes of cooking, it is also practical for a satisfying homemade meal.

Ingredients

1 pound chicken, thinly sliced
½ cup all-purpose flour
½ cup cornstarch
1 teaspoon baking powder
1 egg
¾ cup cold sparkling water
1 teaspoon soy sauce
Vegetable oil, for frying
2½ cups cooked sushi rice
1 cup diced mango
1 carrot, julienned
1 cup steamed broccoli florets
2 tablespoons pickled onions
2 tablespoons sesame seeds
¼ cup soy sauce
1 tablespoon rice vinegar
1 teaspoon honey
½ teaspoon sesame oil

Instructions

1. Combine the flour, cornstarch, and baking powder in a bowl. In a separate bowl, whisk together the egg, cold sparkling water, and soy sauce.
2. Gradually add the wet mixture to the dry ingredients and stir until the batter is combined. Keeping the sparkling water cold helps maintain a light tempura texture.
3. Heat about 2–3 inches of vegetable oil in a deep pan over medium-high heat. Dip each chicken slice into the batter, allowing excess batter to drip away.
4. Fry the chicken in batches for about 3–4 minutes, or until golden and crisp. Avoid putting too many pieces into the pan at once because this can reduce the oil temperature and leave the coating less crisp. Transfer the cooked pieces to paper towels to drain.
5. Divide the cooked sushi rice among four serving bowls. Arrange the mango, julienned carrot, broccoli, and pickled onions around the rice.
6. Place the crispy chicken in the center of each bowl. The colorful arrangement makes the meal especially appealing before the sauce is added.
7. For the dressing, whisk together the soy sauce, rice vinegar, honey, and sesame oil in a small bowl.
8. Drizzle the sauce over each bowl or serve it separately. Finish with sesame seeds and serve immediately while the chicken is still crisp.

Tips for Better Tempura

1. The batter is one of the most important parts of this recipe. Cold sparkling water helps create the light texture associated with tempura, so it is best not to let the batter sit at room temperature for too long.
2. Frying in small batches is equally important. Crowding the pan can lower the oil temperature and affect the texture of the coating. Once fried, the chicken is best served promptly rather than left sitting for a long time.
3. For easier preparation, the rice, vegetables, mango, and sauce can be prepared before frying the chicken. That way, the crisp pieces can go straight from the pan into the assembled bowls.

Easy Ways to Customize It

This bowl can be adjusted according to available ingredients. Pineapple can replace mango for another sweet element, while cucumber or radish can add extra crunch. Avocado can provide a softer contrast to the crispy chicken.
The sauce can also be served lightly or generously depending on preference. Keeping some sauce on the side is useful when everyone wants a different level of seasoning.
Chicken tempura poke bowls offer a satisfying mix of crisp, fresh, sweet, tangy, and savory elements in one dish. The recipe keeps the preparation straightforward while leaving plenty of room for personal touches.
For the best experience, assemble the bowl just before serving so the chicken stays crunchy alongside the cool, fresh toppings.
